Spaghetti with Mint & Olive Pesto

Ingredients

  • (Serves 4)
  • 120g Appetit green pitted olives
  • 400g Misko spaghetti
  • 80ml Appetit extra virgin olive oil
  • 1/3 cup Hastings pecorino, grated plus a little shaved to serve
  • 1 clove garlic, roughly chopped
  • ½ bunch mint, leaves picked
  • ½ bunch parsley, leaves picked

Method

1. Cook pasta in pan of salted water. Drain, reserving a cup of water. Return pasta to pan.
2. In the meantime, rinse the olives. Place in a food processor with herbs, cheese, garlic and oil until chopped roughly.
3. Add the pesto to the pasta and enough water to make a smooth paste. Serve immediately with shaved pecorino.
