Prawn Cocktail


  • (Serves 4)
  • 60ml Birch & Waite whole egg mayonnaise
  • 60ml tomato sauce
  • Mixed lettuce leaves
  • 600g cooked prawns, peeled, tails left intact
  • 1 tbs fresh lemon juice
  • 1 tsp worcestershire sauce Tobasco pepper sauce Salt and pepper


1. To make the cocktail sauce, combine the mayonnaise, tomato sauce, lemon juice, worcestershire sauce and a couple of drops of tobasco sauce in a small bowl. Taste and season with salt and pepper.

2. Place the lettuce in 4 glasses. Top with prawns and drizzle with the cocktail sauce
