Olive, Tomato & Herb Bread

Ingredients

  • 100g pitted kalamata olives
  • 500g self raising flour
  • 1 tsp salt
  • 100g butter, chopped
  • 80g semi-dried tomatoes, chopped
  • 3 tbs chives
  • 3 tbs basil leaves, chopped
  • 170ml milk
  • plain flour, for dusting

Method

1. Sift the self-raising flour and salt into a large bowl. Rub in the butter with your fingertips, until the mixture resembles breadcrumbs. Stir through the tomatoes, olives, chives and basil.

2. Make a well in the centre of the flour mixture and add the milk and 125ml cold water. Mix the liquid into the mixture using a knife, with a cutting action, until almost combined.

3. Place the mixture onto a lightly floured surface and lightly knead until dough forms. Shape into a flat round loaf, dusting the top with flour. Mark the top of the loaf with a knife, into 8 segments.

4. Sit the loaf in the middle shelf of your oven. Cook for 50 minutes, or until the bread is browned and cooked through.
