Fried Haloumi with Mint

Ingredients

  • 2 x 250g Petrou haloumi, drained, sliced into 1cm thick slices
  • 40g (¼ cup) plain flour
  • 125ml (½ cup) olive oil
  • 2 tbs fresh mint, finely chopped
  • 1 tbs Olympia extra virgin olive oil Lemon wedges, to serve

Method

1. Coat the haloumi in flour, and remove any excess.
2. Heat the olive oil in a frying pan over high heat. Add some haloumi and cook for 2-3 minutes each side, or until golden brown. Repeat with remaining.
3. Place on a serving platter, sprinkle with mint and drizzle with extra virgin olive oil.
4. Serve with lemon wedges
