Fetta & Zucchini Fritters


  • (Makes 12)
  • 150g Dodonis Fetta, crumbled
  • 4 tbs Gina vegetable oil
  • 600g zucchini, chopped coarsely
  • 3 shallots, sliced finely
  • 1 onion, chopped finely
  • 1 garlic clove, crushed
  • 2 eggs
  • 3 tbs grated parmesan
  • 3 tbs fresh dill, chopped
  • 3 slices white bread, all crusts removed
  • 50g plain flour
  • 1 tbs salt, plus extra salt and pepper


1. Place the zucchini in a colander, and sprinkle with salt. Set aside to drain for 25 minutes. Rinse under cold water and squeeze dry.

2. In a bowl, place onion, garlic, shallots, eggs, both cheeses and dill. Add the zucchini and season with salt and pepper.

3. In a food processor, place the bread till crumbs form. Add the bread crumbs to the zucchini mixture and combine well. The mixture should be quite dry. If not, add a few more crumbs.

4. Divide the mixture into 12 equal portions and flatten slightly. In a separate bowl, place the flour, and coat each pattie.

5. In a frying pan, heat the oil and cook the patties in batches for 2 minutes each side, or until golden brown.

6. Serve whilst still hot.
