Black Eye Bean Soup

Ingredients

  • Serves 8
  • 1½ cups Galaxy black eye beans
  • 1 tbs Appetit extra virgin olive oil
  • 4 cups cold water
  • 1L vegetable stock
  • 400g canned diced tomatoes
  • 2 tbs tomato paste
  • 2 carrots, peeled and diced
  • 2 celery stocks, diced
  • ¼ cup parsley, chopped, and extra to garnish
  • 1 garlic clove, crushed Sugar
  • Salt and pepper

Method

1. Place the beans in a bowl, covering them in cold water, and leave them to soak overnight. Drain the beans and rinse them under cold water. Drain again.
2. In a large saucepan, combine the water, stock, diced tomatoes and tomato paste. Add the black eye beans, onion, carrot, celery, garlic, parsley and a pinch of sugar and bring to the boil over high heat. Reduce heat to low and cook for 1½ hours, covered, or until beans are tender.
3. Season with salt and pepper. Serve, garnished with parsley and a drizzle of extra virgin olive oil.
